Pelter Winery was founded in 2002 by brothers Tal and Nir Pelter. Tal had just returned from Australia, where he studied Oenology and viticulture studies.

He was captivated by the Australian approach to wine-making, and aspired to introduce it to the Israeli market: Production of quality wines at an accessible price, alongside a unique flagship selected series.

In its first years, the winery operated in the yard of the owners' family home in Moshav Tzofit. In 2005 the winery was relocated to Kibbutz Ein Zivan in northern Golan Heights, where it remains until today, surrounded by its vineyards. Wine production in the Golan Heights, at one of Israel's highest points at 1,000 meters above sea level, has many advantages, like volcanic tuff soil, long and cold winter, cool and dry summer, large temperature range between night and day and strong radiation. These climate conditions provide an ideal environment for a long and slow ripening of the grape, giving it a range of deep and rich flavours and high quality. 

All stages of production are handled by members of the family – from selection of grapes, barrels and blends, to bottling, marketing and distribution. These collaborative efforts produce some 250,000 bottles a year, while preserving the winery’s rustic, intimate character.

White

A light, sharp and perfumed wine with a dry finish. Characterized by citrus flavors of pomelo and lime, herbaceous aromas with a tropical touch. The grapes were harvested manually, in the early summer days in order to maintain the wine's freshness and high pH. The clusters were separated from the weave and gently squeezed on their skins. The fermentation process took place at a low temperature of 12 degrees for a month.

Composition: 100% Savignon Blanc

A rich and complex wine, sharp and fruity. Characterized by tropical aromas and flavors of pineapple, pear and nectar. Has a pleasant and refreshing finish. The grapes were hand harvested to maintain a high pH level. The clusters were separated from the interlacing and gently and slowly squeezed on their skins. Unlike the common method of producing classic Chardonnay wines, the wine has not been aged in wooden barrels and fermented only in stainless steel containers, This is in order to maintain the fruit flavors, sharpness and lightness suitable for the Israeli climate. A mineral and balanced wine, with a soft finish.

Composition: 100% Chardonnay

A rich wine with a round and full body. Characterized by aromas of pear, orange fruit, roasted walnut. Floral and perfumed with a soft and long finish. The vintage is manual. The clusters are squeezed intact and on their shell, allowing for the gentle extraction flavor. After fermentation, the wine undergoes aging for 3 months in French wooden barrels. The wine has high aging potential. After aging the complexity increases but remains fresh due to the high pH level. Gastronomic, very suitable for food accompaniment. Composition: 100% Semillon

A crisp and fresh wine, characterized by tropical and fruity – floral aroma, lychee, and a hint of passionfruit. The grapes were hand harvested early to maintain a high pH level. The clusters were separated from the weave and gently and slowly squeezed on their peels in order to preserve the fruit flavors characteristic of this variety. Rich, complex, fruity, and dry wine. Suitable for food accompaniment.

Composition: 100% Gewürztraminer

red

Dry, full-bodied wine with a long finish. Characterized by aromas of berries and ripe fruits, flavors of coffee, cocoa and eucalyptus. The finish is soft and round. The grapes are handpicked from our vineyard in the Upper Galilee. The wine aged for 20 months in new French oak barrels. This wine is part of the T-SELECTION series, Pelter Winery's high-end series; wine produced from mature vines in selected vineyards. The number of bottles is limited and numbered.

Composition: 100% Shiraz

Dry, medium-bodied wine. Characterized by pleasant aromas of berries and delicate seasoning of cardamom, flavors of cherry, berries, plum and red and orange berries. Highly acidic. The grapes are handpicked from our vineyard in Emek kadesh, Upper Galilee. The vineyard is about 450 meters above sea level. This wine is part of the T-SELECTION series, Pelter Winery's high-end series; wine produced from mature vines in selected vineyards. The number of bottles is limited and numbered.

Composition: 100% Barbera

A fruity and spicy dry wine, with a long finish. Characterized by aromas and flavors of cocoa, violet blossoms, raspberries, vanilla and black cherry. The vintage is manual. Each variety was individually fermented and aged in French oak barrels. After blending, the wine underwent further aging in large wooden barrels. The wine aged for a total of 14 months.

Composition: 70% Cabernet Sauvignon, 15% Merlot, 15% Cabernet Franc

A dry, full-bodied wine with a long finish. Characterized by aromas of black fruits, prunes, cinnamon and cloves. The vintage is manual. Each variety was individually fermented and aged for 20 months in French oak barrels. The fruity combination of Cabernet Sauvignon and the seasoning of Shiraz grapes yield a rich wine with long-standing aging potential.

Composition: 50% Cabernet Savignon, 50% Shiraz

Dry, rich, full-bodied wine. Characterized by the flavors and aromas of mint, black pepper and eucalyptus. Full-bodied and long finish. A varietal wine selected from a variety of Cabernet Sauvignon plots of the vintage that were considered outstanding in quality. The wine aged for 18 months in French oak barrels. This wine is part of the T-SELECTION series, Pelter Winery's high-end series; wine produced from mature vines in selected vineyards. The number of bottles is limited and numbered.

Dry, full-bodied wine with a long finish. Characterized by aromas of green grass, green pepper and moss. Flavors of white pepper, blueberry and eucalyptus. The grapes are handpicked from vineyards in the north Golan Heights. Aged for 20 months in French oak barrels. A varietal wine selected from a variety of Cabernet Franc plots of the vintage that were considered outstanding in quality. Composition: 100% Cabernet Franc

Dry, medium-bodied wine. Characterized by aromas and flavors of raspberry, cherry, tobacco and coffee. Its thin bark makes the grape sensitive and vulnerable and affects the nature of its growth in the vineyard and the color and body of the wine. Fermentation of two weeks on the peels at low temperatures. Punching extraction every four hours. The wine was then malolactic fermentation in French oak barrels, contributing to the wine's aroma and butteriness as well as its aging potential. Limited production, from carefully selected grapes, expressing the special character of this variety.
